Easy Sweet Potato Noodle Recipe

This recipe is flavorful, very good for those health conscious cause it's gluten free.
4 servings
Sweet Potato Salad:
olive oil
2 pieces sweet potatoes ( spiralized )
2 cups sweet corn ( kernels cut off the cob )
1 cup fresh cilantro ( chopped )
1 cup spinach, micro greens, arugula ( chopped fresh greens )
1/2 cup pepitas
For the Chipotle Dressing:
1/3 cup olive oil
3 tbsp water
2 chipotle peppers ( canned in adobo sauce )
1 clove garlic
1 teaspoon agave or honey
1 piece orange ( juice )
1 lemon or lime ( juice )
pinch salt ( generous )
