This easy baked Salmon Sandwich is ready from start to finish in just 20 minutes! Tender and juicy roasted salmon fillets are seasoned with Old Bay, and served with tartar sauce, lettuce and tomato on griddled brioche buns. Pair the sandwiches with potato chips, coleslaw, or a simple side salad for a quick and delicious homemade dinner -- even on your busiest nights!

4 salmon fillets ( 5-6 oz each )
1-2 T olive oil
1 t Old Bay seasoning
1/4 c softened butter
4 brioche buns or other sandwich rolls
Optional tartar sauce ( lettuce, tomato, lemon juice )
