Chewy oatmeal cookies dipped in eggnog glaze

1/2 cup shortening
1/2 cup butter - room temperature
3/4 cup granulated sugar
1 cup firmly packed light brown sugar
2 eggs
2 (1.34ounce) packages instant vanilla pudding mix
1 tbsp vanilla extract
1 tsp baking soda
1 tsp water
1/2 tsp salt
1 tsp molasses
1 cup quick cook oats
2-1/4 cup all purpose flour

1-3 cups confectioners sugar
1 cup eggnog
sprinkles of choice
