Eggplant Lasagna Keto Style

A Keto version of the all-time favorite Italian Lasagna!

500 grams ground beef
1 brown onion
3 cloves garlic
¼ cup unsalted tomato paste
1 beef stock cube
teaspoon sea salt
2 tomatoes
2 eggplants
1 cup hard cheese
½ cup ghee
tablespoon almond flour
FOR THE KETO STYLE SAUCE:
1 liter almond milk
½ cup heavy cream
2 tablespoons almond flour
1 egg
1/2 teaspoon sea salt

Line a tray with baking paper and spread liberally with some melted ghee or cold -pressed olive oil. Put the eggplant slices on the tray and brush with more ghee or oil. Bake till the eggplant is soft....
