Elderberry syrup is a proven remedy for preventing & recovering from the flu, colds, excessive mucus, sore throats, because it contains large amounts of antioxidants, potassium, beta carotene, calcium, phosphorus, & vitamin C. Because of these high levels of vitamins, it has been known to stimulate the immune system. Although several natural elderberry syrups are available at health stores or online, they usually for around $15 or more for 4-8 ounces (gulp!) But you can make your own for

1 cup fresh or 1/2 cup dried elderberries
3 cups water
1/4 tsp cinnamon
1 inch fresh chopped ginger root
**1 cup raw local honey
Mix the elderberries in the water, along with the cinnamon & ginger root into a medium-sized pot. Bring the water to a boil & then simmer for 30 minutes. Stir occasionally & mash the berries with the water...
