Super Easy Enchilada Rice made with homemade enchilada sauce! Loaded with onions, black beans, corn, bell pepper and salsa. The perfect side dish!

Enchilada Rice
1 tablespoon extra virgin olive oil
1 onion, diced
1 green bell pepper, diced
3 garlic cloves, minced
1/2 cup enchilada sauce, recipe follows
1 cup black beans, rinsed and drained
1 cup frozen corn, thawed
1/2 cup salsa
3 cups brown or white rice, cooked
1 tablespoon fresh cilantro, chopped
salt and pepper
Enchilada Sauce
1 tablespoon extra virgin olive oil
1 tablespoon all purpose flour
1 cup chicken stock
2 tablespoons chili powder
1/2 teaspoon light brown sugar
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon cumin
1/4 teaspoon oregano
salt and pepper
