Energy Bars (Gluten, Dairy, & Nut Free)

Energy Bars that have healthy fats, carbs, and protein as an added bonus! They taste as good as the ingredients they are made with!

Energy Bars:
1/2 cup Rice Flour ( White )
1/2 cup Rice Flour ( Brown )
2 cups Oats ( Quick Oats )
3/4 cup Coconut Sugar
1/4 cup Chocolate Protein Powder ( Orgain Brand )
1/2 cup Sunflower Seeds ( salted )
3 tbls Chia Seeds ( dried )
1/4 cup Apricot ( dried and minced )
3 Dates ( dried, pitted, and minced )
1 tsp. Baking Powder
1 tsp. Baking Soda
1/2 tsp. Salt
1 tsp. Xantham Gum
1/2 cup Coconut Cream
2 Eggs
2/3 cup Chocolate Chips ( mini )
2 tbsp. Coconut Oil ( set aside from other ingredients in a separate dish )

1. Mix together all dry ingredients with a fork except for dried fruit

2. Pulse dried fruit and Coconut Cream together in a blender for a few seconds until minced
