1/4 cup Butter
1/2 cup Flour
1/2 cup Sweet Onion ( diced )
1 cup Celery ( diced )
1 Large Green Bell Pepper ( diced )
1 Jalapeno ( seeded and small diced )
3 cups Chicken Stock
2 tbsp Tomato Paste
1 Bay Leaf
1 tsp Kosher Salt
2 tsp Hot Sauce
White Peppe
Cajun Spices for Shrimp:
1/2 tsp Cayenne Pepper
1 tsp Paprika
1 tsp Garlic Powder
1 tsp Onion Powder
1/2 tsp Oregano
1/4 tsp White Pepper ( ground )
1 tsp Kosher Salt
Long Grain Rice:
4 cups Hot Water
2 tsp Kosher Salt
2 cups Long Grain Rice
Garnish:
1/4 cup Green Onions ( sliced )

FIRST STEP
