Hainanese chicken rice is a dish adapted from early Chinese immigrants originally from the Hainan province in southern China. My ancestor are from Hainan, this dish is our family tradition food, during the early years,my mum cook this dish only when someone in the family celebrating birthday. Nowadays, Singaporean this dish everyday, this dish are available in any hawker centre or food court. For just 2dollar, you get a plate of rice with chicken, salad, chilly sauce and a bowl of chicken broth. My daughter love this, I often see the smile on her face when she saw me cooking this dish. So, baby..I am writing thisrecipe specially for you my precious sweetheart, just in case I might not be around tomorrow.

Singapore Hainanese Chicken Rice Singapore

Ingredients
1.5 kg whole chicken
8 cloves garlic
2.5 cm ginger, sliced
1 onion, halved skin on
Salt and white pepper to taste
Water for boiling
Ice bath
3 cups Jasmine rice
1.5 cm ginger, sliced
5 cloves garlic, sliced
Chicken broth
Salt to taste
2 teaspoons oil
3 fresh red chillies
Salt to taste
Juice of 1 lime
4 cloves garlic
1 slice ginger
1 medium cucumber, peeled and sliced
1 tomato, sliced
1 tablespoon (15ml) light soya sauce
1 teaspoon (5ml) sesame oil
Clean chicken removing the fat and reserving them. Wash and season the chicken inside out with salt. Put a pot of cold water to boil. Place chicken in the cold pot with the onion, garlic, ginger slices....
