Fiesta Beef Soup

Fiesta Beef Soup is perfect for this fall and winter! The spicy flavors will keep you warm for sure! As a warning – this makes a LOT of soup. Either half the recipe, or freeze half of it (BEFORE you add the rice – add the rice when you re-heat the soup).

1 lb browned ground beef
1 bunch of celery chopped
1 16 ounce jar salsa verde
2 32 ounce containers of beef broth
3 C water
2 10 ounce can of original Rotel diced tomatoes
2 14.5 ounce cans of stewed tomatoes
1 14.5 ounce can of diced tomatoes
2 15 ounce cans of corn
1 C uncooked 5 minute rice
Place all ingredients - except rice - into large pot Bring to a gentle boil Boil for approximately 1 hour (or until celery is tender) If freezing part of your soup - pull that out here and freeze Add in 5...
