Fish Taco Bowls

Rice and fish are paired with fresh ingredients and a homemade cilantro lime dressing for a filling meal.

2 cups brown rice
1/4 cup dried cilantro
1 lime, juiced
1 tablespoon canola oil
1 pound cod fillets, cut into 3/4 inch strips
1 teaspoon chili powder
black pepper, to taste
1/2 cup all purpose flour
2 eggs, lightly beaten
1 1/4 cups panko
2 cups shredded purple cabbage
1 cup pico de gallo
1 avocado, sliced
1/2 cup dried cilantro
1/2 cup plain non fat yogurt
2 cloves garlic
1 lime, juiced
1/4 cup olive oil
2 tablespoons apple cider vinegar

Cook the rice according to the package directions. Stir in the cilantro and lime juice.
