Soft peanut butter cookie with gooey marshmallow top. Perfect summer treat!

1/2 cup butter softened
1/2 cup light brown sugar
1/4 cup sugar
1 egg
3/4 cup peanutbutter
1 tsp vanilla
3/4 tsp baking soda
1 1/4 cup flour
12 large marshmallows
8 oz. chocolate chips
1 Tbsp shortening
1/2 cup light brown sugar

Cream the butter and sugars together until light. Add in peanut butter, egg and vanilla. Slowly mix in baking soda and flour. Try not to over mix. Chill dough for 30 minutes.
