fluffy frosting

Light and fluffy cooked frosting.

3/4 cup granulated sugar
3 large egg whites
1 1/2 tbsp cold water
1 1/2 tsp lemon juice
1 1/2 tsp vanilla
pinch salt
In a double boiler,place all ingredients in .Whisk until well incorporated and not grainey anymore.It should be a temperature of 160-170 on a candy thermometer.Using your hand mixer ,mix on med-high speed for 7-12 min.The frosting should be fluffy and glossy forming stiff peaks.
