Fluffy Pancakes with Hidden Protein (Vegan and GF)

Can you imagine a light and fluffy pancake without eggs and milk that contains some extra protein hidden in them? Now, having this pancake recipe in your list, you don't need to.

approx. 10 pancakes
1/2 cup Red lentils ( Soaked for at least 1 hour )
1 1/3 cup Oat flour
1 cup Dairy-free milk ( I used almond milk )
1/4 cup Coconut sugar
1 Tbsp Baking powder
1 Tbsp Apple cider vinegar
1 tsp Vanilla ( optional )
pinch of salt

Soak red lentils in water for at least 1 hour. When ready, puree them together with the dairy-free milk in your blender or food processor until smooth. For full description and video instructions,
