This zesty sweet Four Bean Salad is the perfect side for all your summer grilling needs. It is quick to come together, nutritious and oh so darn delicious!

3/4 lb fresh green beans
1/4 cup sugar
1/2 cup apple cider vinegar
2 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
2 stalks celery chopped
1/2 red pepper chopped
1/3 cup finely chopped red onion
1 can (15.25 ounce) Lima bean drained and rinsed
1 can (15 ounce) garbanzo beans drained and rinsed
1 can (16 ounce) kidney beans drained and rinsed

Marinated Taro Root

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
