The perfect combination of flavorful ingredients, this classic Nicoise Salad is a simple, fresh, and easy lunch or dinner option for the sunny months ahead. With warm, crispy roasted potatoes and green beans, tuna, olives, and more, it's a healthy meal that truly satisfies!

6 T olive oil
2 T red wine vinegar
1 t. minced fresh garlic
1/4 t. salt
Dash pepper
12 ounces baby new potatoes
1/4 t. garlic powder
1/2 t. salt
2 T. olive oil
12 ounces fresh green beans
6 cups salad greens
1 cup cherry tomatoes
4 hard boiled eggs
20 whole pitted olives
2 ounces flat anchovy fillets
9 ounces tuna fish packed in olive oil ( drained and flaked )
1/4 cup chopped fresh parsley

Prepare the Vinaigrette:
