Fresh Berry Spinach Salad

This delicious Berry Spinach Salad is the perfect blend of sweet fruits and savory vegetable and herbs! Top with Raspberry Vinaigrette Dressing, pecans, and anything else that strikes your fancy! Vegan, paleo, and super easy to make!

4 cups fresh spinach leaves, loosely packed
1 cup fresh raspberries
½ cup fresh blueberries
3 mandarins, peeled
2 tablespoons red onion, diced
2 tablespoons green onion, sliced
3 tablespoons fresh cilantro, minced
Pecans or sunflower seeds for garnish, optional
1. Toss ingredients in large mixing bowl. 2. Scoop salad into deep bowls and top with pecans, sunflower seeds, or other garnishes as desired. 3. Serve immediately.

A Spanish omelette is also known as tortilla de patatas in Spain where it is a tapa and it consists of just four ingredients plus seasoning. It is a Spanish classic dish for very good reasons. 1 large onion I used red organic
3 med potatoes sliced or cubed
2 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper or some chilli flakes/cayenne pepper
6 tbsp parsley fresh -chopped (optional)
