Fresh Bruschetta Recipe

I made our Baked Bruschetta Chicken and fell in love with bruschetta. I used that same recipe to put on top of baguette bread and served it as an appetizer at a bridal shower and it was a big hit! This would be the perfect appetizer or side dish for any party, get-together, or even lunch for yourself. Let's be honest- I just eat it straight out of the bowl with a spoon.

3 cups tomatoes, diced (I used a mix of roma and cherry tomatoes because that's what I had on hand)
2 teaspoons minced garlic (I just use the kind in the jar)
2 tablespoons olive oil
¼ cup grated Parmesan cheese
4 tablespoons fresh basil leaves, finely chopped (or 2 teaspoons dried basil leaves, but fresh adds a lot more flavor)
2 tablespoons balsamic vinegar
salt and pepper to taste
1 loaf baguette bread
2 teaspoons minced garlic (I just use the kind in the jar)
2 tablespoons olive oil
¼ cup grated Parmesan cheese
4 tablespoons fresh basil leaves, finely chopped (or 2 teaspoons dried basil leaves, but fresh adds a lot more flavor)
2 tablespoons balsamic vinegar
salt and pepper to taste
1 loaf baguette bread
