Fresh Vegetable Quinoa Salad with Peanut Sauce Dressing

The peanut sauce dressing is light, and refreshing, and has a bit of a bite. I love the ginger, cilantro, and citrus notes, and adding fresh veggies always get me excited about anything I’m making. Try this salad, without chicken, as a side, or have it for the main event by adding cooked diced chicken breast before you toss it.
FRESH VEGETABLE SALAD
1 c. red cabbage (coarsely chopped)
1 c. broccoli slaw
1 c. shredded carrots
3/4 c. cooked quinoa
3/4 c. cashew halves
1/4 c. finely diced red pepper
1/4 c. chopped cilantro
2 cooked chicken breast, diced (optional)

PEANUT SAUCE DRESSING:
Juice of 1 orange
Juice of 1/2 lime
3 Tbs. soy sauce
1/8 tsp. garlic powder
2 Tbs. honey
12 Tbs. natural peanut butter
4 tsp. ginger, grated
1 c. red cabbage (coarsely chopped)
1 c. broccoli slaw
1 c. shredded carrots
3/4 c. cooked quinoa
3/4 c. cashew halves
1/4 c. finely diced red pepper
1/4 c. chopped cilantro
2 cooked chicken breast, diced (optional)

PEANUT SAUCE DRESSING:
Juice of 1 orange
Juice of 1/2 lime
3 Tbs. soy sauce
1/8 tsp. garlic powder
2 Tbs. honey
12 Tbs. natural peanut butter
4 tsp. ginger, grated
Place all veggies and chicken in a large serving bowl. Drizzle Peanut Sauce Dressing over the top, and toss until lightly coated. Serve immediately.
