1 head cauliflower ( cut cauliflower into small florets ) 2 Tbsp. soy sauce 2 Tbsp. rice vinegar 2 Tbsp. minced ginger 3 cloves minced garlic 1 Thai red chili pepper, minced 1 1/2 cups vegetable broth 8 oz. block firm tofu ( you don't need to press this. ) 1 red bell pepper 2 cups sliced mushrooms 2 cups bean sprouts 1 cup sliced pea pods 2 medium carrots diced 4 scallions or green onions ( sliced including the green parts ) 1 6 oz. can water chestnuts diced 1 13 oz. can baby corn diced
Cut the cauliflower into small florets and put them in a food processor. Process until the cauliflower is broken down into tiny 'grains' about the size of rice.
