These Roasted Spanish Potatoes with Saffron Garlic Mayonnaise are an absolute stunner. Loaded with so many great flavors, easy to make and done in about 30 minutes. You can serve these potatoes as a tapas appetizer or as a side dish. Either way you go, you will fall in love with these amazing potatoes.

1 cup basmati rice
2 tablespoons butter
1 medium yellow onion ( diced into small pieces )
1 tablespoon minced garlic
1 tablespoon minced fresh ginger
¼ cup golden raisins
¼ cup slivered almonds
½ teaspoon turmeric
¼ teaspoon cumin
¼ teaspoon coriander
½ teaspoon cinnamon
1 (½ cups) chicken stock
½ cup dry white wine ( I use chardonnay )

1/2 cup milk
