Fullblood Wagyu Kielbasa And Lentil Soup

This delicious comfort dish includes smoked Fullblood Wagyu kielbasa sausage, green lentils, onions, leeks, celery, red bell peppers, and garlic. It's topped with torn basil leaves and a dollop of Greek yogurt. This soup recipe is our favorite for warming up on a rainy day!

5 Quarts of Soup
1 package Double 8 Cattle Company Fullblood Wagyu Smoked Kielbasa ( cut in half lengthwise and 1/4-inch-thick half moons )
1 Large Sweet Onion ( diced )
1 Large Leek ( cut in half lengthwise and diced )
3 Large Carrots ( diced to 1/2 inch pieces )
3 Stalks Celery ( diced to 1/2 inch pieces )
1 Large Red Bell Pepper ( diced )
5 Garlic Cloves ( minced )
3 qts. Beef Stock
2 cups Green Lentils
1/4 cup Olive Oil
1 cup Basil Leaves ( plus additional for garnish )
12 oz Tomato Paste
to taste Kosher Salt
to taste Freshly Ground Black Pepper
2 tbsp. Red Wine Vinegar or Hot Sauce
1 tsp. Thyme
4 oz. Greek Yogurt

FIRST STEP

Pull the Fullblood Wagyu smoked kielbasa from the freezer, and place it in the refrigerator 24 hours before making this recipe.
