This is a perfect side dish to change things up. Your family won\\\'t even notice it is quinoa, it tastes so good!

1 cup quinoa
1 tablespoon oil
1 pound cremini mushrooms, thinly sliced
5 cloves garlic, pressed
1/2 teaspoon dried thyme
2 tablespoons grated Parmesan
