Ginger and Chilli Soy Bean Soup

You should cook and taste our delicious seasonally satisfying soybean soup! A side of alliteration anyone?

150 g dried soy beans
30 ml peanut oil
50 g shallots, thinly sliced
30 g ginger, minced
7 g chilli, chopped
1.5 l chicken stock
1 p salt
15 ml sesame oil, for garnish
10 g chopped spring onions, for garnish
  1. Rinse soy beans and soak in a bowl of cold water overnight.
  2. Gently rub beans in between the palm of your hands to loosen the skins. Discard.
