Ginger Beer Battered Fish and Chips

Ginger Beer Battered Fish & Chips is a lovely twist on beer battered fish. Perfect with homemade chips and my tasty sauce.

Ginger Beer Battered Fish:
4-8 Flathead fillets or white fish of your choice ( enough fish to feed 4 people )
2 Cups Plain Flour
1 Teaspoon Baking powder
1/3 Cup Cornflour
500 ml Ginger Beer ( cold )
Plain Flour ( to dust fish fillets )
Canola or Vegetable oil ( for frying )
Chips or Potato Fries:
1-1.25 Kg Potatoes ( 1 1/2 potatoes per person )
Sauce for Fried Fish:
1/2 Cup Japanese Mayonnaise ( non sweet mayonnaise )
2 Teaspoons Horseradish ( minced )
1 Tablespoon Tomato sauce ( or Ketchup )
2 Tablespoons Cornichon ( finely diced )
