Gluten Free Banana Muffins

1 1/2 cup gluten-free flour
3/4 tsp xanthan gum
1/2 cup sugar
1/2 tsp salt
1 1/2 tsp baking powder
1/2 tsp baking soda
1 T cinnamon
3/4 cup rice milk
1 egg
4 T coconut oil
2 ripe banana's
Preheat oven to 350 and grease mini muffin tins. Mix dry ingredients first. Mix in banana's with dry mixture first. Add wet ingredients and mix until combined. Scoop into tins. Bake for 25 minutes.
