1 tsp Cinnamon
1/8 tsp Nutmeg

2 Eggs ( lightly beaten )

1/2 tsp Vanilla extract
1 1/4 Cups Grated carrots ( about 4 small carrots )
For the cheesecake topping:
1 (8 oz) Package Reduced-fat cream cheese ( softened )
1/4 Cup Sugar
1/2 tsp Lemon juice
1/2 tsp Vanilla extract
1 (8 oz) Package Light Whipped topping
1 Tbsp Unsweetened Coconut flakes
1/2 Cup Toasted pecans ( for garnish )
1/4 cup coconut flour
2 tbsp coconut oil
3/4 cup light brown sugar ( packed )
