A delicious Peach Cobbler recipe made with a sweet and buttery almond flour topping. Perfect for when summer peaches are getting over ripe! Enjoy this vegan peach cobbler with vanilla ice cream, coconut sorbet, or even with yogurt for breakfast.

Peach prepping:
4 pounds peach ( ripe )
3 tablespoons coconut sugar
1 tablespoon lemon juice
1 tablespoon arrowroot
1 teaspoon cinnamon
Biscuit Topping:
6 tablespoons almond milk ( unsweetened )
1/4 cup coconut oil ( melted )
3 tablespoons honey ( sub date syrup or coconut nectar for vegan )
1 teaspoon vanilla ( sub almond extract to play up the almond flavor )
1/2 teaspoon sea salt
1/2 teaspoon baking soda
2 cups almond flour ( blanched )
1/4 cup arrowroot
  • Thinly slice peaches and add to a 9x9 baking dish.
