Of all of the interesting foods I have enjoyed while traveling around the world, the cuisine of Vietnam would have to be some of my favorite. Complex flavors that explode with each bite are discovered in these grilled shrimp spring rolls. Delicious served with an Asian Peanut Sauce, these rolls are the perfect summer treat.

1/2 pound grilled or cooked shrimp ( halved lengthwise )
1/4 cup fresh mint ( chiffonade )
1/4 cup fresh basil ( chiffonade )
1/2 cup bean sprounts
1 large carrot ( matchstick )
1 large cucumber ( peeled, seeded, matchstick )
fresh lime juice
