Grapefruit Marshmallow Slice

A white chocolate biscuit base with a set grapefruit curd filling and a fluffy, melt in your mouth marshmallow topping!

125 grams plain biscuits (I use vanilla wines)
150 grams butter
100 grams (3/4 cup) white chocolate, roughly chopped (optional)

FILLING
1/2 cup corn-flour
1/2 cup castor sugar
zest of x 1 large grapefruit (or two small ones)
2/3 cup grapefruit juice, roughly x 2 large grapefruit, or x 4 small ones (if they are not that juicy you may need some more)
4 egg yolks
50 grams butter

MARSHMALLOW
1 cup castor sugar
5 teaspoons gelatine granules (powder)
