Greek Flatbread Pizzas

6 pizzas
2 cups mashed sweet potatoes ( 2 medium sweet potatoes )
3 cups whole wheat flour ( the amount will depend on moisture in the sweet potatoes )
1/2 tsp salt
1/3 cup red wine vinegar ( you can also use white balsamic )
1 clove garlic ( finely minced )
1 tsp. date syrup ( any liquid sweetener such as Agave syrup )
1 tsp. oregano
15 oz can chickpeas ( rinsed and drained )
1 tbsp tahini
1 lemon ( juiced )
2 cloves garlic ( minced )
1 cup cherry tomatoes ( sliced in half )
1 green bell pepper ( sliced )
1 small red onioin ( thinly sliced )
1/2 cup black olives ( sliced )
1 avocado ( sliced )
1/2 cup flat leaf parsley ( chopped )

Timing tip

Prepare the hummus, toppings and vinaigrette while the sweet potatoes simmer.

Finish up those last few things while the flatbread bakes (15 minutes)....
