Semolina cake or Revani is another Greek traditional treat and it belongs in a very particular category of Greek sweets ta siropiasta as we say. Which means sweets with syrup. In this category is the world famous baklava, galaktoboureko, kantaifi and many others that are very demanding in their making. Revani is the simpliest and it’s delicious. You can use oranges instead of lemons but lemon accompanies perfect the exotic taste of coconut!

1 ½ cup semolina
1 ½ cup coconut flakes
½ cup sugar
1 pack Greek yogurt
1 cup melted butter
1 teaspoon baking powder
1 teaspoon vanilla powder
Zest from one lemon
Juice from two lemons

SYRUP

2 cups sugar
2 cups water
Zest from one lemon
2 teaspoons lemon juice
2 cinnamon sticks
