Greek Yogurt Banana Pancake Tacos

These gluten free banana pancakes are filled with Greek yogurt and rolled up like tacos! They’re a fun, healthy breakfast for only 100 calories per taco!

For the tacos:
1/2 Cup Oat flour (50g)
1/2 tsp Baking powder
1/4 tsp Salt
1/2 Tbsp Cinnamon + additional for topping
1/2 Cup Very ripe banana, mashed (about 1 medium banana, or 120g)
2 Tbsp Honey
1/2 tsp Vanilla extract
1 Large egg
1/4 Cup Skim milk
1/4 Cup + 2 Tbsp Non-fat Vanilla Greek yogurt
For Topping:
1 Large banana, sliced
1 Cup Non-fat Vanilla Greek yogurt
