Thanksgiving dinner wouldn't be complete without this classic side dish. Ditch the canned soup and make ours from scratch!

1.5 quarts
4 cups green beans
2 tablespoons olive oil
1/2 yellow onion
3 cloves garlic
1/2 pound mushrooms
1/4 cup flour
1 cup 1% milk
1 cup reduced sodium vegetable stock
pinch nutmeg
pinch dried thyme
1 teaspoon salt
1/8 teaspoon black pepper
1/2 cup panko bread crumbs
1 tablespoon olive oil
