Green Goddess Stuffed Sweet Potato

4 sweet potatoes
2 cups quinoa
1 green goddess dressing recipe
1/4 cup toasted walnuts
2 cups spicy greens

Stir together the green goddess dressing with the cooked quinoa, to taste. I use almost all of it because I like my quinoa saucy. Mix in the chopped walnuts. Slice open each sweet potato lengthwise....
