I had this salad when I was out to lunch on a girls weekend away. It was so good that I jotted down the ingredients on my phone and made my own version. Perfect for a summer’s dinner!

2 large avocados
2 large tomatoes of your choice
6 c of mixed lettuce greens of your choice
2 c of Corn Salsa
Cilantro Lime Crema for drizzling
Lime Vinaigrette
2T olive oil
salt and pepper to taste

Pit, peel and slice the avocado
Slice the tomatoes
Brush slices of avocado and tomatoes with olive oil, grill 3-4 minutes each side
Toss the lettuce greens in the lime vinaigrette
