For the marinade:
Juice of 2 large limes
1 Tbsp Fresh mint ( Roughly chopped )
1 Tbsp Honey
Pinch of salt
2 Small Chicken breasts ( 1/2 a lb )
For the quinoa salad:
1 tsp Coconut oil
1/2 Cup uncooked quinoa
1 Cup water
2/3 Cup White onion ( chopped about 1/2 a small onion )
4 Pineapple rings
3 Tbsp Packed Cilantro ( roughly chopped )
2 Tsp Fresh mint ( finely diced )
2 Tbsp Coconut flakes ( toasted )
2 Tbsp pineapple juice
1/2 an avocado ( sliced )
2 Tbsp toasted macadamia nuts
