We had Chinese food this weekend, one of my favorites. You can make this yummy fried rice too. If you are feeling veggie? Just leave the ham out of this recipe.note this recipe is perfect for leftover rice and leftover ham!

1 Cup cooked rice (cold)
2 eggs (lightly beaten)
1 1/2 tsp Olive oil
3/4 Cups cooked ham (diced)
2 Cloves garlic ( crushed)
1/4 tsp Ground ginger ( fresh ginger is even better)
1 tsp. Black pepper
1/2 Cup frozen peas and carrots mixture ( thawed)
1 1/2 tsp Soy sauce
Non stick skillet or Wok
