Healthier Crispy Chicken Costoletta

This Crispy Chicken Costoletta is a copycat from The Cheesecake Factory. The lemon sauce is to die for! This is my favorite meal of all time!

For the chicken:
4 chicken breasts, cut horizontally, and pounded down to about 1/4 inch thick. (don\'t miss this step, a thin chicken breast is so much better! Even though mine doesn\'t look that thin!)
3 lemons, 2 of them will be zested (is that a word?)
1 1/2 cups plain Panko Bread Crumbs
2 Tablespoons grated parmesan cheese
2 eggs, whisked with 2 Tablespoons water
2 Tablespoons whole wheat flour, I use King Arthurs White Whole Wheat Flour
1 tsp ground pepper
1 tsp salt
2-3 Tablespoons olive oil
1-2 Tablespoons butter
For the Lemon Sauce:
2 garlic cloves, finely minced
1 Tablespoon olive oil
2 cups whipping cream
1 tablespoon Dijon Mustard
1/4 cup plus 1 Tablespoon lemon juice
1/8 cup chicken broth or stock
salt and pepper to taste
1 tablespoon unsalted butter
For the chicken: Preheat the oven to 200 degrees. Zest two lemons. Bake zest for 5 minutes. If you want an easy cleanup for this next part, use paper plates. On one plate combine zest, Panko Bread Crumbs...
