Healthier Mashed Potatoes & Cauliflower! This lighter version of the traditional dish adds cauliflower & Greek yogurt that no one will notice. A healthier side for your dinner table! Gluten Free + Low Calorie

2 medium russet potatoes
4 cups cauliflower
1/2 cup greek yogurt
1 cup unsweetened almond milk or milk of choice
2 tbsp. dried parsley
salt and pepper to taste
  1. Preheat oven to 375 F. Prepare a baking sheet with parchment paper.
