Healthy Custard

I just love custard, and with this recipe, there really is no excuse not to make your own. It’s super easy, quick, healthy and absolutely delicious. I made this to accompany my healthy berry crumble, but love it that much that I could eat it on it’s own. It’s sweet, creamy, light and tastes so good you’ll struggle to believe it’s healthy. A couple more recipes that you could add it to are the sticky toffee cake and the jam tarts! Hope you like it!

1 can coconut milk
2 tbsp. honey or maple syrup
1 vanilla pod
6 egg yolks

Beat all the egg yolks in a bowl.
Add the milk honey/maple syrup and vanilla to a saucepan and heat gently over a medium heat until warm, but not boiling.
