Healthy & Delicious Poha

Poha recipe is a healthy breakfast recipe. It is prepared from flattened rice, diced potatoes, finely chopped onions, peanuts and other herbs and spices mainly served in north Karnataka, Madhya Pradesh, Maharashtra, Gujarat and Telangana.

1 cup thick poha or flattened rice
water for soaking
1 tsp mustard seeds
1/2 tsp. cumin seeds
pinch of asafoetida (hing)
6-7 curry leaves
1 small onion, finely chopped
1 green chili, finely chopped
1/2 tsp turmeric powder
1 fl. oz. ginger, finely chopped
1 finely chopped small potato
2 tbsp roasted peanuts
1 tbsp finely chopped coriander leaves
1 tbsp lemon juice
1/2 tsp sugar
3 tbsp oil
salt to taste
