4 Peaches ( pitted and sliced into quarters )

1 Tbsp Honey
Pancakes:
3/4 cup Buckwheat Flour
1/2 tsp Baking Powder
1/8 tsp Salt
1/2 tsp Cinnamon
3 Eggs ( separated )
1 Cup Low fat ricotta cheese
1/2 Cup Low fat buttermilk
1/4 Cup Splenda
1/4 tsp Vanilla extract
