A healthy halloumi quinoa salad with garlic roasted vegetables and a delicious and fresh tzatziki!

4 oz halloumi
1/2 cup uncooked quinoa
1 cup vegetable broth
1/2 tsp cumin
1 clove garlic
4 handfuls spinach
1 tbsp mint
1 cup tomatoes
1/2 zucchini
2 cloves garlic
1 small red onion
2 tbsp olive oil
1/2 cup greek yoghurt
3.5 tbsp grated cucumber
1.5 tbsp lemon juice
1 tbsp olive oil
1/2 tsp garlic powder
1/4 tsp dried dill
1/4 tsp salt
