Healthy Loaded Veggie Soup

This one was a huge hit with my husband and my kids! The best part is, it is really loaded with veggies! Hope you like it as much as we did!

1 sweet onion, diced
2 cloves garlic, minced
1 medium sweet potato, peeled and cut into 1 inch cubes
1 pound of small red potatoes, cut into 1 inch cubes
2 carrots, peeled and sliced into 1” pieces
2 stalks celery, diced
1 small bag of frozen peas, carrots, green beans and corn
Kosher or sea salt to taste
Garlic Salt to taste
½ teaspoon black pepper
? teaspoon allspice
½ teaspoon crushed red pepper flakes (optional)
4 cups of chicken broth (or you can use vegetable broth)
¼ cup freshly chopped parsley
1 (14.5 oz.) can diced tomatoes

Add all the ingredients to the slow cooker, stir to combine, cover and cook on low 6 to 8 hours or until carrots are tender.
