Healthy Panko Crusted Salmon

This recipe converted me to a salmon lover. It's easy and tastes delicious. A staple in our dinner rotation!

2/3 cup seasoned panko
1 tsp grated lemon zest
salt and pepper to taste
4 tbsp olive oil, divided
4 6-8 oz salmon filets
2 tbsp dijon mustard
