Healthy Stuffed Pepper Soup

A vegan, gluten-free, dairy-free, made with wholesome ingredients recipe. The red lentils are a good source of fiber and protein and it cooks fast making the soup creamy. Very easy to prepare in an Instant Pot or Slow cooker. Love the taste hope you love this recipe as much as I do.
10 cups
1 cup uncooked rice ( I like to use jasmine or basmati )
2 cups bell pepper ( diced )
1 garlic ( clove )
2 tbsp avocado oil ( or olive oil )
4 cups vegetable broth
14 oz canned fire roasted diced tomatoes
14 oz canned tomato sauce
1 tsp salt ( to taste see notes )
1 tsp black pepper
1 tsp salt-free Italian blend seasoning
1/2 tsp garlic powder
1/4 tsp dried oregano
1/4 tsp red pepper flakes
1 cup dry red lentils
1 cup onion
2 cups bell pepper ( diced )
1 garlic ( clove )
2 tbsp avocado oil ( or olive oil )

14 oz canned tomato sauce
1 tsp salt ( to taste see notes )

1 cup dry red lentils
1 cup onion
- Cook the rice according to package directions for your preferred method. I skipped my usual stove top rice method and made mine in my Instant Pot using the rice button. Either way works...
