Healthy Sweet and Sour Chicken

This sublimely delicious sweet and sour chicken recipe is so easy to make. It can be ready in under 30 minutes so is perfect for when you’re short on time. I’ve made a delicious sweet and sour sauce using pineapple juice instead of sugar to create a healthy and nutritious alternative and if you cant get hold of any potato starch (most health stores do sell it), you can substitute for corn starch.
2 chicken breasts
1 onion, chopped
1 red chilli, deseeded and sliced
3 sweet peppers, chopped
2 carrots, chopped
1/2 cup/125g baby corn
3/4 cup/125g piccolino tomatoes, sliced
Handful of kale
1 tbsp. coconut oil
2 tbsp. tomato puree
2 tbsp. apple cider vinegar
2 tbsp. potato starch
2 1/2 cups/425g can pineapple chunks

Heat the coconut oil in a frying pan and add the onion, chilli, peppers, chicken and carrots, fry for 5 minutes over a high heat.
