Healthy Tagalong Copycats

These Tagalongs are the perfect healthy replacement for those wonderful girl scout cookies, and still taste divine!
For the cookie base:
1 3/4 cups Whole Wheat Pastry Flour- I use Bob’s Red Mill
1/2 tsp Baking Soda
1/2 tsp salt
1 cup Peanut Butter
1 cup Honey
1/4 cup butter, softened (you can put it in the microwave for about 5 seconds at a time until softened)
1 Egg, beaten
1 1/2 tsp Vanilla
For the filling:
1/2 creamy peanut butter (try to get the least amount of ingredients possible)
2 Tablespoons honey
For the chocolate layer:
4-5 ounces dark chocolate
For the drizzle:
1/4 cup peanut butter

Preheat oven to 350 degrees. Grease baking sheet.
Whisk together flour, baking soda and salt.
In a separate bowl, combine peanut butter, honey and butter.
Add egg and vanilla and mix well.
