A deliciously hearty vegetable soup for a chilly fall or winter day. Bursting with chickpeas, veggies, and quinoa!

2 tablespoons olive oil
1 medium yellow onion
2 medium carrots
3 stalks celery
4 cloves garlic
12 cups vegetable broth
1 teaspoon fresh thyme
1/2 teaspoon dried oregano
2 whole bay leaves
1 cup dried quinoa
2 (15 ounce) cans chickpeas
1/2 cup chopped parsley
  • Heat oil over medium heat in a large pot. Add onion, carrots, celery, and garlic, and cook until softened (about 10 minutes.
