1 medium yellow onion
2 medium carrots
3 stalks celery
4 cloves garlic
12 cups vegetable broth
1 teaspoon fresh thyme
1/2 teaspoon dried oregano
2 whole bay leaves
1 cup dried quinoa
2 (15 ounce) cans chickpeas
1/2 cup chopped parsley
